After a weekend of pure and utter indulgence…well, actually, more like a month-long binge of indulgent eating (hello Key Lime Pies! and Bacon Wrapped Jalapeño), I decided to clean up my act a little bit. Lucky for me the man of the house also decided to make a large batch of slow cooked buffalo chicken.We are totally in sync sometimes.
With so many different ways to eat said Buffalo Chicken, I am sure this way is my favorite. How do I know?!? I’ve had it close to every meal this week…and I’m still going strong. I am positive I will never tire of this creation, which is OK because it’s a pretty healthy way to indulge.
The heat of the chicken matched with the light crispness of the romaine lettuce leaf is a combination made in heaven. The juicy tomatoes and cream of the cheese bring the dish together in a way that is almost indescribable…seriously though, you’ll be hooked after trying your first bite.
The best thing about this??? It takes 2 seconds to put together after you’ve whipped up the slow cooked chicken (recipe here). The other best thing?!?! You’ll only dirty one pot (your slow cooker) and the plate you eat this on. AMAZING. It’s totally a dish you can whip up for a quick snack, bring to a potluck, or serve as a main dish for dinner, basically there is no wrong way to eat these.
Note: You can use just about any sturdy lettuce leaf to wrap these in, iceberg is a great alternative to romaine. I used Feta cheese because I like the taste, but you can substitute with any other cheese.
Buffalo Chicken Lettuce Boats
Quick and easy way to enjoy a healthy buffalo chicken dish
- 2 large romaine lettuce leaves (clean and ends removed)
- 1/2 cup shredded buffalo chicken
- 4 baby heirloom tomatoes (sliced into quarters)
- 2 tablespoons feta cheese
- Step 1 layer 1/4 cup of buffalo chicken on each lettuce leaf
- Step 2 top with tomatoes and cheese
